You’ll love this creative take on the classic Bruschetta – all from items found in the dining hall!
Bruschetta
In a bowl mix:
- ½ cup chopped tomatoes
- a drizzle of olive oil
- A drizzle of balsamic vinegar
- A sprinkle of oregano
- Salt and pepper to taste
Spoon on top of freshly toasted whole grain bread of your choice.
If you’re feeling frisky mix it up add in any of the following: onion, cucumber,
black olives, chili flakes, garlic powder, feta cheese, chickpeas, orange
slices – or heck- anything else off the salad bar!
